It is possible to buy skyr in some other countries than Iceland, at least in parts of the US, UK and in Scandinavia. This cake is fresh and delightful, and if you prefer other fruits on top of the cake just use your imagination. Blueberries and strawberries are also a good choice.
250 mL (8.5 oz) cream
250 g (8.5 oz) vanilla skyr
75 g (2.5 oz) butter
Half a pack LU cinnamon sugar spice biscuits
Half a jar good jam (I prefer blueberry or other berry jams from St. Dalfour with no added sugar)
Crush the LU biscuits. I normally put them in a plastic bag and crush them with a baking roller but it is also easy to use a food processor. Melt the butter and mix it with the crushed biscuits. Press the biscuits to the bottom of a form and add some jam on top of it. Whip the cream and mix the skyr with it carefully. Then put the mixed cream and skyr on top of the crust. Chop the fruits and spread them over the cake. Enjoy!
